Quarantine Tacos: For When You Don't Quite Have All The Ingredients

What can you do when you're craving tacos but only have a few random ingredients and cannot go out to buy more?


These tacos satisfy taco cravings without being proper tacos, and they are easy and very fast to make.

So what makes a taco a taco? At the heart of this dish, it has a few basic food groups that are necessary: tortillas, protein, vegetables, and dairy. As long as you have a tortilla and some fillings to put inside, a taco can be made (although it may not be very authentic).

As this is a recipe of substitutions, any of the ingredients below may be omitted or switched for something else that you might have on hand.



Quarantine Tacos

Serves 3
Takes 20 minutes

Ingredients

6 uncooked tortillas
1 cup shredded lettuce or cabbage
3/4 cup diced tomatoes
3/4 cup shredded rotisserie chicken or any other meat or beans
1/4 cup rice
1 onion, garlic, or leek
3 tablespoons vegetable oil
1 bell pepper or the equivalent of other colorful vegetables like corn, radishes, mushrooms, and zucchini
1/4 cup shredded cheddar, mozzarella, or other less pungent cheese
3 tablespoons sour cream, plain yogurt, or cottage cheese
sauce and flavoring of your choice
salt and pepper to taste

Additional toppings to add: lime, avocado, cilantro, jalapeno peppers

Method

  1. Heat the oil in a large pan. Stir fry the onions until yellow in color. Add in the bell pepper, chicken, rice, and spices or sauces. Cook until bell pepper is soft and pour into a bowl to set aside.
  2. Cook the tortillas according to the packaging.
  3. Serve tortillas, stir-fried mixture and toppings for taco making.
