Quarantine Tacos
Serves 3
Takes 20 minutes
Ingredients
6 uncooked tortillas
1 cup shredded lettuce or cabbage
3/4 cup diced tomatoes
3/4 cup shredded rotisserie chicken or any other meat or beans
1/4 cup rice
1 onion, garlic, or leek
3 tablespoons vegetable oil
1 bell pepper or the equivalent of other colorful vegetables like corn, radishes, mushrooms, and zucchini
1/4 cup shredded cheddar, mozzarella, or other less pungent cheese
3 tablespoons sour cream, plain yogurt, or cottage cheese
sauce and flavoring of your choice
salt and pepper to taste
Additional toppings to add: lime, avocado, cilantro, jalapeno peppers
Method
- Heat the oil in a large pan. Stir fry the onions until yellow in color. Add in the bell pepper, chicken, rice, and spices or sauces. Cook until bell pepper is soft and pour into a bowl to set aside.
- Cook the tortillas according to the packaging.
- Serve tortillas, stir-fried mixture and toppings for taco making.
