Brown sugar boba is a simple non-caffeinated boba drink perfect for when you're craving something sweet and simple to make (assuming you already have boba on hand, of course!).
Many variations of this drink can be made by adding different teas or using different types of milk and boba. Usually, a shot of espresso or black tea is added on top for caffeine.
The beauty of this drink comes from the brown sugar syrup clinging to the sides of the cup before it is stirred. More prominent brown stripes require darker brown sugar. I used regular brown sugar, but dark brown sugar or even molasses will make the drink even more striking.
Protip: do not let boba cool completely before adding milk and syrup. It will get hard or soggy and the chewy texture that you want will disappear. Make the drink cold by using ice and cold milk instead.

Brown Sugar Boba
Makes two servings
Ingredients
1/4 cup brown sugar
1 tablespoon water
1/2 cup boba (matcha boba recipe here)
1 cup milk
1/4 cup half and half
1/3 cup ice
Method
- Heat brown sugar and water over high heat until boiling. Turn down to a simmer until mixture has a syrup texture.
- Pour boba into cups.
- ladle brown sugar syrup on the inside edges of the cup to create "tiger stripes."
- put ice in cups and pour milk and half and half over it. Serve while cold.
